Smoothies are a helpful and scrumptious dinner that is ideal for when you don't have room schedule-wise to cook. I utilized blackberries since they contain less carbs than blueberries, strawberries and raspberries. I live in the UK where blackberries are presently in season and I have just picked more than 10 pounds and keep them in the cooler.
Ingredients
1/2 cup blackberries, fresh or frozen (75 g/ 2.6 oz)
1/4 cup full-fat cream cheese or creamed coconut milk (60 g/ 2.1 oz)
1/4 cup heavy whipping cream or coconut milk (60 ml/ 2 fl oz)
1/2 cup water (120 ml/ 4 fl oz)
1 tbsp MCT oil or extra virgin coconut oil
1/2 tsp sugar-free vanilla extract or 1/4 tsp pure vanilla powder (you can easily make your own)
optional: 3-5 drops liquid Stevia extract or other healthy low-carb sweetener from this list
Instructions
- Place all the ingredients in a blender: heavy whipping cream, cream cheese, water, MCT oil, vanilla, and optionally a few drops of stevia.
- Add the blackberries and pulse until smooth and frothy. Pour in a serving glass and enjoy!
